Zero Gluten, Zero Dairy, Zero Shit Paleo Spinach Bread
As I am getting more and more into the paleo lifestyle, I have found some very unique and smart ways to take a favorite food and make it healthier then ever. Of course, I’m missing my sandwiches, since everyday I pack a salad. Don’t get me wrong, I make a mean salad; salads that I can’t wait to eat everyday. But a girl needs some variety!
Thats when I came along this paleo friendly website with a mom that only wants the best for her body and her kids’.
Primal Spinach Bread
Makes 6 flatbreads, enough for 3 sandwiches
4 eggs
2 cups baby spinach
1/4 cup raw almonds
1/4 cup unsweetened coconut flakes
In a blender, combine all the ingredients until smooth. Let the green shake sit for 10 minutes while you get a frying pan ready with a little olive oil over medium heat. Pour the batter into 5 inch circles (they will turn out looking like pancakes) and flip when done on each side, 1-2 minutes.
For a snack after being outside all day, I took one of the flatbreads and put a few slices of whole milk cheese, hummus, lettuce, and tomatoes. God, it was delicious.
